Egyptian Koshari

In Egypt, Koshari is a hugely popular street food and also the national dish. It's made from what sounds like a strange combination of ingredients - rice, lentils, chickpeas AND pasta, all cooked together, then topped with spicy tomato sauce, garlic vinegar and crispy fried onions. For such a humble combination it's packed with flavour and is incredibly satisfying to eat!

Shopping List

  • 2 large onions -1 ½ thinly sliced, ½ finely chopped
  • 2 cloves of garlic - finely chopped
  • 400g tin of tomatoes
  • 75g spaghetti or similar thin pasta - broken into 3cm lengths
  • 250g pouch or 400g tin of cooked puy or brown lentils - drained and rinsed
  • 150g basmati rice
  • 400g tin of chickpeas - drained and rinsed
  • 2 tbsp vinegar (white wine or cider vinegar is best)
  • A big pinch of sugar
  • 100ml oil (sunflower or vegetable oil is best)

BIBER BLEND: 4 tsp

KAMMUN BLEND: 2 tsp

QARFA BLEND: ½ tsp

SUMAK BLEND: ½ tsp
