Harira

Harira is a hugely popular soup in Morocco, often served during Ramadan because it refreshes and nourishes in equal measure. It’s a very simple but satisfying meal in a bowl, and the slaked flour stirred in at the end gives it a really rich, velvety texture.

Shopping List

  • 250g lamb or beef mince, or use veg mince for a veg/vegan version
  • 1 stick of celery or leek (optional)
  • 1 onion
  • 2 cloves of garlic
  • 25g bunch of coriander or parsley
  • 1 lemon
  • 400g tin chopped tomatoes
  • 400g tin of chickpeas
  • 100g green, black or brown lentils
  • 1 chicken, lamb or vegetable stock cube (optional)
  • 2 tbsp plain flour
  • 30g rice (any type)
  • Flatbreads and harissa to serve
