Kuku Sabzi Omelette

Coinciding with the Spring Equinox, Persian New Year (also known as Nowruz) is celebrated with the gathering together of family and friends. Kuku Sabzi is an omelette traditionally eaten on this occasion which is rooted in the Zoroastrian religion - the herbs symbolise rebirth and the eggs represent fertility.

Shopping List

  • 1 onion
  • 1 clove of garlic
  • 100g bunch of parsley or coriander (or a mix of soft herbs such as dill, tarragon, chives etc)
  • 150g natural yogurt (full fat is best)
  • 6 eggs (any size)
  • 30g sour cherries, dried cranberries, raisins or barberries
  • 30g flaked almonds
  • 1 tbsp self-raising flour
  • Salad to serve (eg finely shredded iceberg lettuce, thinly sliced cucumber, thinly sliced tomato and lemon wedges)
  • Flatbreads or pitta to serve
