Ants Climbing a Tree Noodles

The quirky name of this dish comes from its appearance where the little bits of mince (the ants) look like they're climbing a tree branch (the vermicelli noodles). It's easy to make and the rich heat from the LA JIAO BLEND and MA LA BLEND gives a lovely depth of flavour, with a seriously spicy kick!

Shopping List

  • 250g pork or beef mince
  • 1 bunch of spring onions - thinly sliced
  • 2 cloves of garlic - finely grated or crushed
  • Fresh ginger - finely grated or chopped to make 2 tsp
  • 2 chillies (any colour) - deseeded and cut into small bite-size pieces
  • 125g approx. dried vermicelli noodles or use 300g approx. pre-cooked vermicelli noodles
  • 1 tbsp tomato puree
  • 1 tbsp miso paste (any type) or use chilli-bean paste (doubanjiang) (optional)
  • 1 tbsp soy sauce (any type)
  • 2 tbsp vinegar (rice, white wine or cider vinegar is best)
  • 1 tsp sugar
  • 1 stock cube (any type)
  • 2 tsp sesame oil (optional)
