Brown Stew Chicken

‘Brown stew’ is a distinctively Caribbean dish where the meat is browned in caramelised sugar, then cooked in a sauce rich in herbs and spices to produce a thick, flavoursome gravy. Whether eaten with traditional rice and peas or a pile of buttery mashed potato it makes fantastic comfort food.

  • 4 chicken legs or large chicken thighs - skin removed if you prefer
  • 1 large onion - thinly sliced
  • 3 cloves of garlic - finely chopped
  • Fresh ginger - finely chopped to make 1 tbsp
  • 5g bunch of thyme - leaves picked
  • 1 lime
  • 2 tbsp sugar

I have made lots of the meals from the Curry Legend World Tour cook book, but this is our favourite - Brown stew chicken, coconut rice and Jamaican festival dumplings (all in the same kit). It always goes down a treat!

Aw, this is incredible. I bought lots of chicken drumsticks and used my amazing spicery spices for a tasty cookathon. This dish is rich and flavoursome beyond anything I expected. Can't wait to cook this again and I haven't even finished this pot of deliciousness.
