Durban is home to the largest population of people of Indian origin in sub-Saharan Africa, making Indian food very popular there!

This South African version of butter chicken consists of grilled chicken in a sauce rich with butter, tomato, spices and evaporated milk in place of the yogurt and cream used in India.

  • 500g diced chicken (thighs are best)
  • 2 cloves of garlic - finely chopped
  • Fresh ginger - finely chopped to make 1 tbsp
  • 2 tomatoes - roughly chopped
  • ½ lemon
  • 50g butter
  • 170ml evaporated milk
  • 2 tbsp tomato puree
  • 2 tsp sugar
