Gado Gado

Gado gado is a hugely popular dish from Indonesia, and is often served for lunch or mixed to order as a snack at street food stalls across the country. The combination of the different textures of vegetables, eggs and raw cucumber all served at room temperature, with the warm, sweet and spicy sauce poured over the top is an unusual one but it makes an absolutely delicious and very easy meal.

Shopping List

  • 500g new or baby potatoes - left whole
  • 500g mixture of crunchy veg (eg white cabbage, carrots, green beans etc) - peeled and cut into large bite-size pieces
  • ½ a cucumber - peeled and thinly sliced
  • 2 cloves of garlic - finely grated or crushed
  • 2 limes
  • 4 eggs (any size)
  • 100g peanut butter (any type)
  • 200ml coconut milk (full fat is best)
  • 2 tbsp soy sauce (any type)
  • 1 ½ tbsp sugar
  • Prawn crackers to serve
