Geera pork is a classic Trinidadian curry that’s often served as a bar snack on the islands.

It’s a dry curry that features bite sized pieces of pork and plenty of cumin (geera), and is given a long slow simmer to allow the flavours to penetrate the meat, producing perfectly tender spiced pork.

  • 800g diced pork (shoulder is best)
  • 1 medium red onion - finely chopped
  • 2 cloves of garlic - finely chopped
  • 2 green chillies - finely chopped (seeds removed if you prefer less heat)
  • 2 tomatoes - roughly chopped 
  • 10g bunch of coriander (optional) - roughly chopped
  • 1 lime
