Hot & Sour Soup

A soup dish is a common addition to any Chinese meal, and this hot and sour version is always a favourite! We're making a simplified version here with bacon in place of strips of char siu pork, and fresh mushrooms rather than dried, but once you've mastered this recipe you'll find that you can use pretty much any combination of ingredients you like.

Shopping List

  • 2 rashers of bacon (any type) or use 2 slices of ham - thinly sliced into matchsticks
  • 300g approx. block of firm tofu (optional) - drained, patted dry then cut into small bite-sized pieces
  • 100g mushrooms (any type) - thinly sliced
  • 100g peas (fresh or frozen) or use 1 bunch of spring onions - thinly sliced
  • Fresh ginger - finely grated or chopped to make 1 tsp
  • 2 eggs (any size) - beaten with 2 tbsp water to a smooth texture
  • 225g approx. tin of bamboo shoots (optional) - drained and rinsed
  • 1 tbsp tomato ketchup
  • 60ml vinegar (rice, white wine or cider vinegar is best)
  • 3 tbsp soy sauce (any type)
  • 1 stock cube (any type)
  • A pinch of sugar
  • 30g cornflour
  • 2 tbsp sesame oil (plus extra to serve)
