Singaporeans love to eat, and everywhere you go in the city there’s always a hawker centre or food stall nearby, so you’re never far from a delicious meal or snack! To begin this date night, we’ve got a Singaporean favourite, chicken satay - spicy skewers served with a sweet and tangy peanut sauce and a simple cucumber salad. Next up, curry laksa, a dish with everything you need in one bowl - noodles, beansprouts and prawns covered in a mildly spiced coconut broth served with a fiery chilli sambal. Finally, for dessert we have a popular street food called pisang goreng, moreish banana fritters flavoured with cinnamon, allspice and ginger topped with a coconut syrup.

Shopping list
  • Diced chicken (thighs are best) or use meat-free chicken style pieces for a veg version
  • Shelled prawns (raw ones are best) or extra diced chicken, or use halved boiled eggs for a veg version
  • 150g shallots or 1 medium red onion
  • 2 cloves of garlic
  • Fresh ginger
  • ½ cucumber
  • 150g beansprouts
  • 25g bunch of coriander or mint
  • 1 lime
  • 1 large banana
  • 50g peanuts
  • 100g sugar
  • 65g self-raising flour or gluten-free alternative
  • ¼ tsp baking powder (optional)
  • 1 tbsp soy sauce (dark is best) or gluten-free alternative plus extra to serve
  • 1 tbsp fish sauce or use extra soy sauce
  • 400ml full fat coconut milk
  • Dried noodles for 2 (any type)
  • Oil for frying (sunflower or vegetable oil is best)
