This hearty meal-in-a bowl consists of chewy udon noodles coated in a thick curry sauce topped with gingery pickled radishes.

Shopping List

  • 300g diced chicken (thighs are best)
  • 1 medium onion - thickly sliced
  • 1 medium carrot - peeled and thinly sliced
  • 50g radishes - thinly sliced
  • Fresh ginger - finely chopped to make 1 tbsp
  • 2 cloves of garlic - roughly chopped
  • 1 tsp sugar
  • 2 tbsp plain flour 
  • 2 tbsp soy sauce (any type)
  • 2 tbsp vinegar (rice, white wine or cider vinegar is best)
  • 4 x 150g packets of ready cooked udon noodles

Blends Needed

HALDI BLEND: 4 tsp

JEERA BLEND: tsp

METHI BLEND: 3 tsp

MIRCHI BLEND: ½ tsp
