Kristang Feng Curry

The Kristang people are a minority community from Malacca, the descendants of Portuguese traders and native Malaccan women.

Kristang cooking has a predominantly local influence but the Portuguese were responsible for introducing chillies, vinegar and a fondness for pork to the cuisine.

Shopping List

  • 500g pork belly or shoulder - cut into bite-size pieces
  • 250g liver (any type) - cut into bite-size pieces or you can use extra diced pork if you prefer
  • 300g shallots or 2 medium red onions - finely chopped
  • 4 cloves of garlic - finely chopped
  • 2 tbsp vinegar (rice, white wine or cider vinegar is best) 
  • 2 tbsp soy sauce (any type)
  • 1 tbsp tomato puree
  • 1 tsp sugar
