Mee Rebus

Mee rebus literally translates as ‘boiled noodles’ and is a popular dish sold in hawker centres across Malaysia, Singapore and Indonesia.

The rich curried beef broth is thickened with sweet potato and the dish topped with boiled eggs, coriander, crispy shallots and fresh coriander.

Shopping List

  • 500g diced beef
  • 200g shallots or 1 large red onion - ½ roughly chopped, ½ thinly sliced
  • 2 cloves of garlic - roughly chopped
  • Fresh ginger - roughly chopped to make 1 tbsp
  • 2 lemongrass stalks - thinly sliced
  • 10g bunch of coriander - roughly chopped
  • 1 lime
  • 250g sweet potatoes - peeled and cut into bite-size pieces
  • 2 eggs (any size)
  • 250g dried egg noodles
  • 130ml oil (sunflower or vegetable oil is best)
  • 1 tbsp sugar
