‘Ayam’ is the Indonesian translation of chicken, and ‘opor’ means to be braised in coconut milk - it’s a mild and fragrant curry perfect for the whole family to enjoy!

  • 500g diced chicken (thighs are best)
  • 150g shallots or 1 medium red onion - roughly chopped
  • 3 cloves of garlic - roughly chopped 
  • Fresh ginger - roughly chopped to make 2 tbsp
  • 2 lemongrass stalks - bashed with a rolling pin then cut into 3cm lengths
  • 1 lime - zested and halved for juicing
  • 400ml full fat coconut milk
  • 2 tsp sugar
