Pathia has similarities to the hot and sour curries of Tamil Nadu and Sri Lanka - it's sweet from the use of sugar and caramelised onion, sour from the addition of lemon juice and tamarind, and slightly hot from the chillies, both whole and ground. On the side is a simple saag aloo (spinach and potato) dish, subtly flavoured with mustard seeds, cumin and garam masala.

On the side is a simple saag aloo (spinach and potato) dish, subtly flavoured with mustard seeds, cumin and garam masala.

This kit contains the recipe and all of the spice blends needed to cook the different components of the meal - all you need to do is add a few fresh ingredients and follow the simple steps!

Equipment needed: 2 x large lidded pans and a blender

  • 300g-400g peeled prawns (raw ones are best) or use 500g diced chicken
  • 500g new or baby potatoes
  • 2 onions
  • 2 cloves of garlic
  • Fresh ginger
  • 10g bunch of coriander (optional)
  • 200g spinach (fresh or frozen)
  • 2 tomatoes
  • 1 lemon
  • 30g butter
  • 1 tbsp tomato puree
  • 1 tbsp sugar
  • Rice and yogurt to serve

This turned out incredible, it tasted so good and had a nice amount of heat. I doubled the amount of garlic, and added a teaspoon of mustard seeds in with the chili at Step 3 and fried them together. I only cooked 200g of rice and split it into two meals. I'll definitely be eating this again!

Very tasty had a spicy kick but we both enjoyed it. The chicken was tender and the rice had just a hint of lemon which complimented. This was way better than any Indian restaurant we have tried.
