Anyone visiting a Greek bakery will more than likely come across many different varieties of filo pies. This is the most popular, known as Spanakopita in Greece. The flaky moreish filo pastry combined with a dense filling of greens and feta cheese makes for a fantastic lunch, dreaming of warmer climes!

Shopping List

  • 500g spring greens or kale - cut into small bite-size pieces
  • 1 onion - finely chopped
  • 3 cloves of garlic - finely grated or crushed
  • 200g feta cheese - crumbled
  • 4 eggs (any size) - beaten
  • 30g uncooked bulgur wheat, or use couscous or dry rice (any type)
  • 8-10 sheets of filo pastry (approx. 200g)
  • Olive oil
  • 2 tbsp sesame seeds (optional)

BIBER BLEND: 4 tsp

KAMMUN BLEND: 3 tsp

QARFA BLEND: ½ tsp

SUMAK BLEND: 4 tsp
