Barbecued skewers (known as "shaokao") seasoned with lots of Sichuan pepper, soy sauce and sesame, are popularly eaten as street food in many cities across China. Here we're making them from summer veg, and serving with a soy and vinegar dipping sauce for a delicious new flavour profile to enjoy on your barbecue this summer!

Shopping List

  • 300g approx. block of firm tofu - drained and pressed dry with kitchen paper or a clean tea towel then cut into bite-sized pieces, or use diced chicken
  • 300g approx. courgettes, peppers or aubergine - cut into bite-size pieces
  • 1 onion - cut into wedges then the layers separated
  • 1 clove of garlic - finely grated or crushed
  • 3 ½ tbsp soy sauce (any type)
  • 1 tbsp sesame oil (optional)
  • 2 tsp sugar
  • 1 tbsp tomato puree
  • 1 ½ tsp vinegar (rice, white wine or cider vinegar is best)
  • Rice or flatbreads to serve
