Thai Yellow Curry

Yellow curry comes from the south of Thailand where the cuisine has a stronger Indian influence.

The inclusion of lots of turmeric in the spice blend creates an aromatic and brightly coloured curry, enhanced by the fragrant addition of that quintessential Thai ingredient, lemongrass.

Shopping List

  • 500g diced chicken (thighs are best)
  • 150g shallots or 1 medium red onion - roughly chopped
  • 4 cloves of garlic - roughly chopped
  • 2 lemongrass stalks - bashed with a rolling pin then cut into 3cm lengths
  • 250g floury potatoes - peeled and cut into bite-size pieces
  • 1 tbsp sugar
  • 1 tbsp fish sauce 
  • ½ lime
