There are a whole variety of fabulous Turkish kebabs to choose from, but here we have one of our favourites - yogurtlu kofte kebab! These kebabs consist of fried pitta bread topped with juicy lamb kofta, a simple tomato sauce, a drizzle of yogurt and finally hot spiced butter on top. It’s a rich and delicious combination, served with a moreish and delicious vermicelli rice on the side.

Equipment needed: 2 x medium saucepans and kitchen foil

Shopping list
  • 500g lamb or beef mince (higher fat content is best)
  • 1 clove of garlic - finely grated or crushed
  • 150g natural yogurt (full fat is best)
  • 20g butter
  • 400g tin of tomatoes
  • 2 tsp sugar
  • 3 pitta breads - split open then cut into bite-sized pieces
  • 50g vermicelli pasta or spaghetti - broken into 2cm lengths
  • 250g basmati or long grain rice
