Paprika Potatoes
A simple 5 ingredient recipe that goes great with Jerk or BBQ chicken!

Ingredients
500g new potatoes - peeled and cut into bite-size pieces
1 large onion - thinly sliced
2 cloves of garlic - finely chopped
2 peppers (any colour) - thinly sliced
1 tbsp SMOKED PAPRIKA
Method
Fry the onion and peppers in 2 tbsp oil for 15 minutes or until very soft, sticky and beginning to brown
Stir in the garlic, 1 tbsp SMOKED PAPRIKA and ¾ tsp salt and cook for 1 minute or until the garlic is soft
Add the potatoes and 200ml water, cover and cook for 15 minutes then uncover and cook for a further 10 minutes or until the potatoes are cooked through and coated in a thick sauce. This dish can be served at room temperature
Kosambari Salad
This salad is light and refreshing and goes great with burgers or hotdogs!

Ingredients
½ a small white or red cabbage - thinly sliced
1 large carrot - peeled and coarsely grated
½ lemon
2 tsp MUSTARD SEEDS and a pinch of CURRY LEAVES
Method
Mix the cabbage and carrot with the juice of the ½ lemon and a pinch of salt
Fry 2 tsp MUSTARD SEEDS and a pinch of CURRY LEAVES in 2 tbsp oil for 30 seconds or until the seeds just start to pop and jump around
Mix all the spices and oil into the cabbage and carrot
Shepherd's Salad
This colourful salad gives a nice burst of freshness and is great with kebabs!

Ingredients
4 medium tomatoes - finely chopped
1 cucumber - deseeded and finely chopped
1 small red onion - very finely chopped
10g bunch of parsley - leaves picked
1 lemon
100g feta cheese - crumbled
50g walnuts - roughly chopped
2 tbsp good quality olive oil
1 tbsp SUMAC
Method
Toast the walnuts in a dry pan for a few minutes or until beginning to turn a darker brown around the edges
Mix the onion with the juice of the lemon, the tomatoes, cucumber, toasted walnuts, parsley, feta cheese, 2 tbsp of olive oil, a pinch of salt and 1 tbsp SUMAC
