Fattoush Salad with Sumac
Like Mum, Sumac is versatile in nature. With this Fattoush Salad, Sumac adds a pop of colour to brighten up the dish and represents Mum's ability to cheer us up when we're down!

Ingredients
A mixture of salad ingredients for 4 (e.g lettuce, tomatoes, radishes, cucumber, parsley, olives, etc) - broken or cut into bite-size pieces
About 100ml good quality olive oil
2 tbsp vinegar (white wine or cider vinegar is best)
2 pitta breads
1 tbsp + 2 tsp Sumac
Method
Split the 2 pitta breads in ½ then sprinkle generously with olive oil and a pinch of salt. Grill, bake or fry the pieces until they are thoroughly crisp and dry. Break the pitta into bite-size pieces
Make a dressing by mixing together the vinegar, 90ml olive oil, a big pinch of salt and 1 tbsp Sumac
Mix the salad ingredients with the dressing and the pitta pieces
Sprinkle 2 tsp Sumac over salad to serve
Roast Chicken and Ground Cinnamon
Cinnamon symbolises the warmth and sweetness of Mum's touch...here it is sprinkled over Roast Chicken to add an extra burst of flavour!

Ingredients
1 large chicken
½ lemon
Your choice of vegetables to serve
A few pinches of Ground Cinnamon
Method
Preheat the oven to 180°C/gas mark 4
Pop the ½ lemon in the breast cavity of the chicken then rub the chicken with 1 tbsp oil or butter and season well with salt and pepper
Roast for 1 ½ hours (or the time given on the chicken’s instructions) or until the meat is cooked through to the bone - you’ll know it’s cooked when you insert a skewer into the thickest part of the thigh the juices run clear
Cover with foil and allow to rest for 15 minutes. Carve and sprinkle with a few pinches of Ground Cinnamon
Rose Petal Chocolate Pots
Roses are a symbol of love and affection and its gentle fragrance can be likened to Mum's soft but gentle nature! Give your deserving Mum the best of both worlds - flowers and chocolate - with an indulgent Chocolate Pot garnished with Rose Petals!

Ingredients
350ml double cream
100g decent quality milk or dark chocolate - broken into small pieces
1 tbsp sugar
Shortbread for 4 to serve
1 tsp Rose Petals
Method
Gently warm the cream and sugar for 5 minutes to just below boiling point until the sugar has dissolved
Stir the chocolate into the cream until fully melted
Pour the mixture into 4 small cups or dishes (espresso cups are ideal) then sprinkle 1 tsp Rose Petals over each. Refrigerate for 2 hours or until set
Serve the chocolate pots with the shortbread on the side
