Fortunately for us at Spicery HQ the well known phrase 'Too many cooks spoil the broth' proved to be completely unfounded when, for a couple of weeks in Feb we had a different guest each day from the charity Refugee Action coming and cooking their most beloved food from their home country. The countries covered were Cameroon, Kurdistan, Iran, Jamaica, Gambia, Sudan and Uganda and the dishes ranged from the fairly familiar sounding pilaf to the less familiar ndole.
After putting the recipes to the public vote, Mahin's Mofatah with Rice won the place of main course for our Refugee Action Big Night In! During our rigorous testing procedure we managed to squeeze in a few of the other delicious dishes to create the following menu:
Once the full recipe was developed it was a pleasure to invite our wonderful guest chefs, Refugee Action staff and some local press to have the full meal cooked for them. The most we've cooked for before was 26 max. On this occasion the number grew to around 40 so prep had to be done the day before (Suze on dessert duty and me on the main).
We really loved having the refugees back as our guests, and being able to cook for them this time! Here's the moment when we announced Mahin as winner (she's on the right, looking emotional!):
There was a great atmosphere as everyone trooped back for seconds, thirds and....well I hesitate to say fourths but it may have happened. The atmosphere was augmented by Spicery Andrea's brilliant playlist which she's been putting together ahead of the box launch, it's a mix of top tunes suggested by our guests as they cooked!
The playlist is now available on Spotify and Youtube, so we'll leave you with a music video from this to get you in the mood. More importantly, the Refugee Action Big Night In Box is available NOW to pre-order - it's all your ready-measured spices and recipes to cook this delicious meal, and all proceeds go straight to Refugee Action. Win!
