Aleppo chilli flakes are made from a mild, fat, red chilli without a huge amount of seeds that's been crushed, giving a really delicious flavour without too much heat or pungent dried chilli aroma. The whole chillies are salted and dried, then flaked and rubbed with oil resulting in a wonderfully bright, rich colour and delicious sweet flavour.
