Baba Ganoush

Baba ganoush is a delicious mezze of grilled aubergine, seasoned with garlic, lemon and cumin. The key is to get the aubergine thoroughly charred and soft - don’t be afraid to really burn the aubergine as the skin is discarded and this dip is at its best if the flesh retains more of that lovely smoky, grilled flavour.

  • 2 aubergines - left whole but pricked several times with a fork
  • 2 cloves of garlic - left whole in their skins
  • ½ lemon
  • 1 tbsp tahini (optional) or use nut butter (with no added salt or sugar)
  • 4 tbsp extra virgin olive oil
  • A handful of pomegranate seeds or roughly chopped parsley to serve (optional)
