There are two ideas about the name ‘balti’: one is that it originates from Baltistan in Pakistan, and another that it’s an English translation of the Urdu word for ‘bucket’ referring to the dish it’s cooked in - whichever is true, it’s now become something of a British classic!

  • 1 large red onion - roughly chopped
  • 2 cloves of garlic -roughly chopped
  • Fresh ginger - roughly chopped to make 1 tbsp
  • 10g bunch of coriander - finely chopped
  • 1-2 green chillies - thinly sliced (seeds removed if you’d prefer less heat)
  • 50g butter
  • 1 tbsp tomato puree
