Bang Bang Chicken

The name of this spectacular chicken salad comes from its unusual preparation method, where you poach the chicken then bash it (making a 'bang bang' sound!) to tenderise the flesh, before shredding into thin fibres. It's a surprisingly effective way to create the most delicious, tender strips of chicken, which are then bathed in a rich and tangy chilli oil dressing.

Shopping List

  • 2 chicken breasts or boneless thighs (skinless) - about 400g total weight
  • ½ a bunch of spring onions - cut into 5cm lengths
  • 2 cloves of garlic - roughly chopped
  • A finger-sized piece of fresh ginger - half cut into 3 slices, the remaining half roughly chopped to make 1 tbsp
  • 2 tsp tahini or peanut butter (optional)
  • 1 tbsp soy sauce (any type)
  • 2 tbsp vinegar (rice, white wine or cider vinegar is best)
  • 1 tsp sugar
  • 1 tbsp sesame oil (optional)
  • 75ml oil (sunflower or vegetable oil is best)
