Beans with Garlic, Lemon & Cumin

Beans and pulses are a staple food across the Middle East, and one of the favourite ways of cooking them is stewed very slowly with lots of garlic, lemon and olive oil, then seasoned simply with ground cumin. They’re often eaten as a breakfast dish as they’re very filling and nutritious, but also work well as a side dish.

  • 2 x 400g tins of beans (eg cannellini, borlotti, butter beans etc) - including all the liquid from the tins
  • 1 clove of garlic - finely grated or crushed
  • ½ lemon
  • 1 tomato - finely chopped
  • 60ml extra virgin olive oil
