  • 1 medium red onion
  • 2 chillies (any colour)
  • 4 tomatoes
  • 2 avocados
  • 3 limes
  • Sour cream to serve
  • 198g tin of sweetcorn
  • 400g tin of black beans, pinto beans or borlotti beans (including all the liquid from the tin)
  • 1 stock cube (any type) (optional)
  • 200g long grain rice
