This is a variation on a famous dish, cauliflower 65, from the Buhari restaurant in Chennai (formerly Madras).

Cauliflower florets are marinated in spiced yogurt, coated in flour, fried until crispy and finally covered in a spiced butter - cauliflower never tasted so good!

Shopping List

  • 1 small cauliflower - cut into very small florets
  • 1 green chilli - finely chopped (seeds removed if you prefer less heat)
  • 200g natural yogurt (full fat is best)
  • 40g butter
  • 100g plain flour or use gram (chickpea) flour
  • 50g cornflour
  • Oil for frying (sunflower or vegetable oil is best)
