Chicken & Bulgur Wheat Traybake with Parsley & Lemon Dressing

This month we've got a really delicious and satisfying traybake, ideal for an easy mid-week dinner. The nutty bulgur wheat absorbs all of the flavours from the onion, chicken and spices, and the parsley and lemon dressing added at the end really freshens everything up and adds a lovely contrast of colour and texture.

  • 4 chicken legs (slashed through to the bone a few times) or use large cauliflower florets for a veg version
  • 1 onion
  • 2 cloves of garlic
  • 20g bunch of parsley
  • 1 lemon
  • 200g bulgur wheat
  • 60ml olive oil
