Cucumber Yogurt

Virtually every country in the Middle East has a cooling cucumber and yogurt dish such as tzatziki, cacik and tarator, but here we’re making an Iranian version known as mast o khiar. It often contains raisins for a delicious sweetness that really complements the herbs, creamy yogurt and cooling cucumber.

Shopping List

  • ½ cucumber - coarsely grated
  • 1 clove of garlic - finely grated or crushed
  • 10g bunch of mint, dill, coriander or parsley - finely chopped
  • 200g Greek yogurt (full fat is best)
  • 25g raisins (golden ones look best) - roughly chopped
  • 1 tbsp extra virgin olive oil to serve (optional)
