Dizi Stew, also known as Abghoost, is a hearty and delicious Persian dish made with beans, lamb or mutton and vegetables, often eaten in the winter. 'Dizi' refers to the traditional stoneware pot it's often served in, but you can use any lidded pan to make this version.

Shopping List

  • 300g diced lamb or use 1 large aubergine cut into large bite-sized pieces
  • 500g potatoes (waxy ones are best)
  • 1 onion
  • 2 cloves of garlic
  • 10g bunch of parsley (optional)
  • 1 green pepper
  • 1 lemon
  • 3 tbsp tomato puree
  • 400g tin of chickpeas
  • 400g tin of kidney beans
  • 1 stock cube (any type) (optional)
