Dum aloo is a mild Kashmiri dish of baby potatoes cooked with tomato, yogurt and spices. The potatoes soak up all the flavours as they cook ('dum' refers to the slow-cooking method) and the result is an incredibly rich and satisfying dish with real depth of flavour, that’s actually surprisingly easy to put together.
