En-chilada roughly translates as in-chilli sauce, and describes how the rolled tortillas are coated in chilli sauce before being grilled. Here we're making a classic enchilada with a rich tomato sauce, and lots of melted cheese on top!

  • 400g tin of tomatoes
  • 1 tbsp vinegar (white wine or cider vinegar is best)
  • 100g cheddar cheese - coarsely grated
  • Your choice of sour cream, thinly sliced avocado, roughly chopped coriander, and thinly sliced green chillies to serve
