Fattoush

Fattoush is a Middle Eastern salad given a bit more substance by the addition of toasted or fried pieces of flatbreads. It’s a very rustic, unrefined dish which works equally well with any mix of ingredients you might have at home - from lettuce, cucumber, tomato and radishes to celery, spring onions and raw cauliflower.

Shopping List

  • 750g mixed salad veg (eg little gem lettuce, radishes, cherry tomatoes etc) - cut into large bite-size pieces
  • 20g bunch of parsley - leaves picked
  • 2 pitta breads - split open and cut into bite-size pieces
  • 90ml extra virgin olive oil
  • 1 tbsp vinegar (white wine or cider vinegar is best)
