Fideo Seco

Fideo Seco is an easy and delicious Mexican dish consisting of vermicelli pasta fried in oil until nice and crispy, then cooked in a rich tomato and chilli salsa. The cooking method of first frying the pasta in oil was brought to Mexico by the Spanish, whilst the chillies, avocado and lime are uniquely Mexican additions!

  • 2 cloves of garlic
  • 1 avocado
  • 1 lime (optional)
  • 3 tbsp tomato puree
  • 50g white cheese (eg feta, Lancashire etc) (optional)
  • 150g sour cream to serve
  • 300g dried vermicelli pasta, or use spaghetti
