Gilafi kebab is a Moghul dish, the name of which literally translates as 'covered kebabs'. Here the spiced mince is covered with finely chopped peppers and garlic which brown and caramelise as the meat cooks to make a delicious coating - just take care to turn regularly and keep basting them to avoid burning the coating!
