Gujarati Winter Veg Stir-Fry

This crunchy cabbage and carrot recipe comes from the state of Gujarat on the western coast of India. Like lots of Gujarati food, it’s sweet and sour from the use of sugar and lemon juice, and the Curry Legend spices add a fabulous depth of flavour to this simple but surprisingly delicious dish.

  • 500g potatoes (any type) - peeled and cut into 1cm cubes
  • 2 medium carrots - peeled, halved lengthways then thinly sliced
  • ½ cabbage (any type) - finely shredded
  • 10g bunch of coriander (optional) - roughly chopped
  • 1 lemon
  • 1 tsp sugar
