Harissa is the favourite chilli sauce of North Africa and versions there can range from explosive to thermonuclear in heat level. This version is milder (but still strong) and just a dab of harissa should be enough to give your kebabs and tagines just the right boost of heat and spice!

  • 3 red chillies - deseeded and finely chopped (leave the seeds in if you prefer more heat)
  • 1 clove of garlic - finely grated or crushed
  • 1 tbsp tomato puree
  • 2 tsp vinegar (white wine or cider vinegar is best)
