Herb Pilaf

This is a classic Turkish-style rice dish made fragrant with lots of fresh herbs, as well as crunchy pine nuts and sweet raisins. You can use any mix of herbs you prefer, or even try chopped spinach, watercress or rocket leaves - the key thing is to incorporate plenty of that fresh green herb flavour and spectacular colour.

  • 25g bunch of parsley, mint or coriander
  • 300g basmati or standard long grain rice
  • 50g raisins
  • 30g pine nuts or use pistachios, walnuts or hazelnuts
