Ikan Bakar

Ikan Bakar is an Indonesian dish of fish marinated in a spicy chilli paste, then wrapped in a banana leaf (or as we're doing here, in a foil parcel), grilled and served with a sweet soy dipping sauce. It's a delicious way to cook any fish as the wrapping helps to protect the flesh, whilst the spicy marinade gives an incredible depth of flavour.

Shopping List

  • 4 firm-fleshed fish fillets or use 2x blocks of firm tofu (pressed dry and cut into thick slices) for a veg version
  • 100g shallots or 1 small red onion - finely chopped
  • 2 cloves of garlic - roughly chopped
  • Fresh ginger - roughly chopped to make 2 tsp
  • 2 lemongrass stalks (optional) - thinly sliced
  • 2 limes
  • 75ml soy sauce (any type)
  • 20g sugar
