Jalfrezi (meaning ‘hot fry’) can be best described as a kind of Indian stir-fry.

Typically it’s made with lots of sliced green chillies; this version is medium heat without them (so only add your own fresh green chillies if you like a really spicy jalfrezi!).

  • 500g diced chicken (thighs are best)
  • 1 large onion - thinly sliced
  • 2 cloves of garlic - finely chopped
  • Fresh ginger - finely chopped to make 2 tsp
  • 2 peppers (any colour) - cut into bite-size pieces
  • 2 green chillies (optional) - thinly sliced 
  • 2 tomatoes - cut into wedges
  • 1 lemon
