Khoresht is a Persian stew, often with a sweet and sour flavour profile from dried fruit and citrus or sumac. This version uses lots of dried fruit but the sweetness is beautifully balanced with the spices and lemon to make a really delicious, family-friendly meal.

  • 4 chicken legs or large thighs
  • 2 large carrots
  • 1 onion
  • 2 cloves of garlic
  • 2 eating apples or pears
  • 1 lemon
  • 10g bunch of parsley or coriander (optional)
  • 2 tbsp tomato puree
  • 100g dried fruit (eg raisins, dates, apricots etc)
