Kolhapur - a city in the south central part of India in the state of Maharashtra - is renowned for its spicy cuisine, and this delicious chicken curry is no exception. An integral part of the dish is the goda masala, a special blend of darkly toasted spices and coconut that creates a delicious savoury flavour. Each household in Kolhapur has its own secret blend with regards to which ingredients are used, proportions of the ingredients and the level of toasting.

This kit contains the recipe and all of the spice blends needed to cook the different components of the meal - all you need to do is add a few fresh ingredients and follow the simple steps!

Shopping list
  • 500g diced chicken (thighs are best) or 1 cauliflower for a veg version - broken into small florets (following the same cooking instructions)
  • 1 medium red onion - thinly sliced
  • 2 cloves of garlic - finely chopped
  • Fresh ginger - coarsely grated or finely chopped to make 1 tbsp
  • 1 lemon - zested then halved for juicing
  • 150g natural yogurt (full fat is best)
  • 200ml coconut milk (full fat is best)
  • 20g desiccated coconut
  • 2 tbsp tomato puree
  • 300g basmati or long grain rice
