Here we have a traditional green Konkani curry with plenty of fresh green herbs and finished with yogurt.

Shopping List

  • 500g diced chicken (thighs are best)
  • 1 medium onion - thinly sliced
  • 2 cloves of garlic - finely chopped
  • Fresh ginger - finely chopped to make 2 tsp
  • 10g bunch of mint - leaves picked 
  • 10g bunch of coriander - leaves picked 
  • 2 green chillies - roughly chopped (seeds removed if you prefer less heat)
  • 100g natural yogurt (full fat is best)
  • 20g desiccated coconut
