To the south of Mumbai on the west coast of India lies the Konkan coast - a lush, sparsely-populated area dotted with ruined palaces and coconut trees.

This is a traditional curry from the region, with plenty of fresh green herbs and finished with yogurt.

Shopping List

  • 2 x 226g paneer cheese - cut into bite-size pieces
  • 1 medium onion - thinly sliced
  • 10g bunch of mint - leaves picked
  • 10g bunch of coriander - roughly chopped
  • 2 green chillies - roughly chopped (seeds removed if you prefer less heat)
  • 2 cloves of garlic - finely chopped
  • Fresh ginger - finely chopped to make 2 tsp
  • 100g natural yogurt (full fat is best)
  • 20g desiccated coconut
