You can use any mix of veg you have to hand for this dish - the contents would vary through the seasons in West Bengal and Bangladesh - but aim for a mix of different colours and textures for the best result.

  • 750g mixed veg (eg aubergine, carrots, cauliflower etc) - peeled if necessary and cut into bite-size pieces
  • Fresh ginger - finely grated to make 1 tbsp
  • 10g bunch of coriander (optional) - roughly chopped
  • ½ lemon
  • 30g desiccated coconut
  • 2 tbsp mustard (Dijon is best)
  • 2 tsp sugar
