This bread is from southern Iraq, and you can see the influence of the ancient Moghul empire as it’s very similar to Indian naan bread, which is also cooked quickly in a tandoor oven until it puffs up with those familiar blackened bubbles on the surface. It’s a great one to wrap a kebab, or tear off pieces to dip into mezze.
