Description

These lightly spiced and slightly tangy onion rings are a fantastic appetiser, or serve them as a side dish at a Curry Legend feast where they’re sure to disappear quickly! Marinating the onion in vinegar first gives them a slightly pickled taste, and the mixture of spices in the batter adds yet another layer of flavour.

  • 2 large red onions - thickly sliced and pressed out into rings
  • 2 tbsp vinegar (white wine or cider vinegar is best)
  • 60g cornflour
  • 75g plain flour
  • ½ tsp baking powder (optional)
  • Oil for frying (sunflower or vegetable oil is best)
