Hungarians are well known for their love of paprika - a spice that’s the result of drying and grinding the finest sweet and hot peppers (capsicum annuum) which gives the most amazing rich colour and sweet depth of flavour. Here we're using the spice to flavour the ultimate chicken burger and a lecso relish, both served in a bun along with bacon, beetroot chrain, garlic sour cream and dill pickles. All that’s needed on the side are some delicious herbed rosti bites and a crunchy beetroot and caraway slaw to transport you to a food truck on the banks of the river Danube!

Shopping list
  • 4 skinless, boneless chicken thighs or use meat-free chicken style fillets for a veg version
  • 8 rashers of streaky bacon or use veggie bacon for a veg version
  • 500g potatoes (any type)
  • ½ small white cabbage
  • 250g raw beetroot
  • 1 onion
  • ½ cucumber
  • 1 red pepper
  • 300ml sour cream
  • 40g sugar
  • 100g self-raising flour
  • 85ml vinegar (white wine or cider vinegar is best)
  • 4 burger buns
  • Oil for frying (sunflower or vegetable oil is best)
